This is a sweet bread from Finland and has much to recommend it.
Ingredients:
- 1tsp to 1tbsn (according to taste) of ground cardomon
- 6 cups of bread flour (if one of them is wholemeal that would be good)
- Yeast
- 1/2 cup sugar
- salt
- 11/2 cups of warm milk
- 1/2 cup warm water
- 1/2 cup butter softened in the milk
- 2 eggs
Method
Make a dough with the above in the usual manner and allow to rise to about double volume
Divide into three portions and then divide each of those into three as well
Roll each small ball of dough in ropes about 16″ long – then plait them together and tuck the ends under
Brush on an egg glaze and sprinkle with sliced almonds and, optionally, chopped crystallised ginger pieces
Allow to rise for 20-30 minutes
Cook at 350F for 20-25 minutes
Enjoying
Eat warm with butter and honey
Notes
I believe that this is the “traditional” recipe, but it might be worthwhile to put the ginger in the dough and not on the top as it has a high sugar content and tends to burn.
